Tenderness Tips for Microwaving Beef

In conventional cooking, slow to moderate heat develops tenderness and full beef flavor. In microwave cooking, however, the rapid rate of heating food tends to produce less than tender results. One solution to this problem is to select a lower power setting when using a microwave oven so the food cooks at a slower pace.
Another suggestion is to marinate the beef in either vinegar or lemon juice which also adds additional flavor. You can also make less tender beef cuts more to your liking by pounding them or cutting them into thin strips before cooking.
SUPER LIVER SLICES
Here is a delicious recipe for Super Liver Slices. Total cooking time is about 8 minutes and 30 seconds on high. Or, if desired, reduce heat to medium and for a total cooking time of about 12 minutes.
Place 4 slices bacon around sides of 12x7-inch baking dish. Cover with wax paper and cook in microwave on HIGH 3 minutes (or 4 minutes on MEDIUM), rotating dish 1/2 turn after 2 minutes. Remove bacon to paper towel and set aside.
Spread 1 pound beef liver, sliced 1/2- to 3/4-inch thick, with 1/3 cup bottled Thousand Island dressing. Dredge in combination of 2/3 cup fine bread crumbs, 1 tablespoon minced parsley, 1 1/2 teaspoons paprika, 1/2 teaspoon salt and 1/8 teaspoon black pepper. Coat thoroughly.
Place liver slices in bacon drippings and cook 2 minutes and 30 seconds on HIGH or 4 minutes on MEDIUM. Turn liver and cook 2 minutes longer or 3 minutes on MEDIUM. Place bacon on top of liver, rotate dish and cook 1 minute more. Makes 4 servings.
